    I followed the original Atkins diet and forced myself to eat a limited amount of meat. I still lost 2 stone in 3 months but pined for vegetables and vegetarian food. So it was a revelation to find Ms Elliot’s low carb vegetarian cookbook. The recipes are easy to follow and the ingredients can be found in either the local supermarket or health food shop. They are also inexpensive, unlike all that meat! I must admit that there are quite a few tofu recipes and also there is a reliance on cheese and eggs, which may be difficult for vegans. Tonight I am trying mockaroni, a tofu based version of macaroni. But it if lets me continue to achieve weight loss without the meat I’m willing to learn to love tofu!

    I found this book very similar to Rose Elliot’s other veggie low carb book ‘The Vegetarian Low Carb Diet: The Fast, No-hunger Weight Loss Diet for Vegetarians’ with some duplicate recipes. However, the extra recipes makes it well worth purchasing this book. Compared with other veggie low carb books, this one makes it very simple to understand how many carbs are in each recipe and therefore make losing weight extremely easy. I would (and do) recommend this book to those wanting to lose weight the veggie way.

  3. I often cater for people with certain dietary needs. One of them is vegetarian, on a low-carb diet and has a wheat allergy.

    The veggie bit I’m used to, but the other stuff is tricky until you get this book.

    It may not say it on the cover, but this is just as useful for somebody on a wheat-free diet (though not necessarily a gluten-free one) as somebody on a low-carb diet. Since recipes containing wheat are nearly always high carb, they’re not in here.

    It seems like a bit of a niche product, this recipe book, but the food you make from it is just great food, like anything you’d expect from an experienced food writer like Rose Elliot. It introduces you to a few ideas you wouldn’t try otherwise perhaps, but that can only be a good thing.

    The recipes I’ve tried all turn out really well, and the food is so good that the phrase I often hear is, Why can’t restaurants serve food like this when it’s so easy to do?

    I have quite a lot of experience of diets. Over the years I have done fasting, macrobiotic, the Cambridge diet, Slimfast etc. Slimfast is quite a simple one but last year, lost very little weight after several weeks, so hungry and disappointed. Decided to give lo-carb a go, as long as mainly veggie. After one week have lost half a stone so thrilled to bits. The book is good as it is quite simple for the beginner at lo-carb eating. I like Rose Elliot’s style and this book I would recommend to anyone wishing to lose weight safely but relatively quickly.

    I’m vegetarian and have tried to loose weight for years. I’ve tried eating little and often, I exercise alot, but nothing seemed to shift the weight. So I decided to buy the atkins diet book and give that ago. I made a list of all the foods you were allowed and then listed things I could eat, like quorn products, soya etc etc. I bought this book, just to see if it said the same sort of thing and it did – exactly the same thing. You may as well buy atkins and use your brain to come up with veggie alternatives. The recipies in this book (apart from a couple) arn’t great. It’s typical arsey vegetarian recipies. It’s really quite easy to come up with your own recipies. I found it was good making a list of all the quorn products I like, all the spoya products etc and then write down the carbs that are in them.

    The low carb diet has been very successful for me (which quite frankly is a mieracle). I have an underactive thyroid and I take other medication that really slows the metabolism down. I was starting to think that no amount of healthy eating or exercise would work. After restricting my carb in take to 20g’s a day, I have lost 11 pounds in 12 days. Which is ruddy brilliant!!! I would recommend buying the atkins book though and then coming up with your own ideas. There’s more information in there.

    Don’t get me wrong, this is a hard way of eating. It’s very restrictive and you have to have alot of will power to stick to it. But having finally had excellent results after years of trying to loose weight, I will be sticking to this. Alot of people have had side effects, but I haven’t had any. I may not have quite s much energy on certain days when I’m exercising, but thats about it.

    I really hope this works as well for you as it has for me.
